RECIPE FOR UGALI (White corn meal)

 

INGREDIENTS:

 

2-lb. bag of 100% stone ground white corn meal

4 cups of boiling water

Green pepper

Red pepper

Tomato

Onion

Carrots

Cabbage

Beef or chicken

Salt

 

 

Preparing corn meal (approx. 20 minutes):

 

1.     Boil approximately 4 cups of water for every 2-lb. bag of 100%  stone ground white corn meal; add corn meal gradually and mix with wooden spoon.  Slowly turn down heat to medium high while stirring.

 

 

2.     Continue adding corn meal to water and stirring until you get a solid consistency.  Press/mix together with flat part of wooden spoon.  When finished, it should be doughlike or breadlike, so that you can break it off and hold in your hand.  Allow corn meal to cook for at least 20 minutes—bottom of pan will be burnt.

 

Preparing meat (chicken or beef) (approx. 20 minutes):

 

1.     Cut and dice and mix tomatoes, onions, carrots and green pepper

2.     Sautee in oil for approximately five minutes.

3.     Add salt to personal liking.

4.     Basically, stir fry vegetables with the meat for 20 minutes.

 

Preparing the cabbage (approx. 10 to 15 minutes):

 

1.     Shred the cabbage and cut and dice and mix carrots, tomatoes, onions, green and red pepper.

2.     Sautee in oil for five minutes.

3.     Boil cabbage with sautéed veggies until done.

 

When the above process is complete, put the ugali (corn meal) on a plate with the meat and cabbage portions.  Break off a piece of ugali with your fingers and pick up a piece of the vegetable mixture and/or meat and begin eating.  Enjoy. (Even you, Nevins)
